When you view source for that page, it appears the image is background:

background-image: url('images/backhome/spaceearth.jpg');

As for the tables, again, look at the source for how it's done.

I have found a way you can do something like that. Take a look at this forum (It's not live as I am working on it myself so it's just sitting off-line at the moment) www.ozycarbontaxforum.com.au

Don't go by the images I used as I just choose any, but the concept is the same.

You would probably need to go to all the background colour codes and change them the one that suits you which in his case is black.

Can I suggest that you make a request the owner of the site for a copy of his theme he is using as long as you can assure him your going to change the images, even offer him some cash as that might encourage him to help you. Any good words about his site might help as well. Just a thought;

Let me know if that helps and I'll tell you what I did.

NOTE: This is just my opinion but after scrolling his site it became a real nuisance having to scroll down the page with each page refresh. Think about it.
